Chargrilled Tuna with warm bean salad sounds fancy and time-consuming to make. However, we’ve found a great recipe that will only take minutes to create. Could this be the quickest meal you’ll ever prepare? We think so!

The recipe – serves 4

 

Ingredients

4 x 200g tuna steaks

oil spray

salt

freshly ground black pepper

3 tsp olive oil

1 clove garlic, crushed

zest and juice of 1 lemon

420g tin cannellini beans, rinsed and drained

4 marinated artichokes, quartered

1 small red onion, sliced

100g baby rocket

 

Method

  1. Cook the tuna for 1-2 minutes on each side or until cooked to your liking. Place onto plates and drizzle with lemon juice.
  2. Meanwhile, in a separate pan, warm the olive oil with the garlic and lemon zest.
  3. Add the beans and stir gently until warmed through. Remove from heat and add artichokes and red onion.
  4. Arrange rocket leaves on serving plates and top with bean mixture.
