Maggie Beer's delicious gnocchi recipe to warm your autumn nights

Now that autumn has rolled in and we’re more likely to be spending more time at home fighting off the colder weather, we’re gonna need some kitchen inspiration and carbs!

Maggie Beer has to be one of Australia’s most celebrated cooks. She has had a career spanning many decades in the industry and has had cookbooks published and tv shows made featuring her delicious recipes.

We all wish we could cook like she does, so we wanted to give you a dish that will fill your belly and keep you warm whether it’s lunch or dinner. And of course, one that’s easy to make.

Maggie’s delicious recipe is taken from her website.

Spinach & Ricotta Gnocchi with Tomato & Chilli Sugo – Serves 4

Ingredients:

250g fresh spinach finely chopped

500g ricotta

1 cup finely grated parmesan

½ cup plain flour

2 free range eggs lightly beaten

1 tablespoon Extra Virgin Olive Oil

To taste salt flakes

To taste freshly ground black pepper

1 jar Tomato & Chilli Sugo (or Sugo Tomato Chilli in some stores)

1 handful flat leaf parsley

Method:

Step 1: In a large bowl combine the spinach, ricotta, parmesan, flour, eggs, Extra Virgin Olive Oil, and add sea salt and freshly ground pepper to taste. Making sure the ingredients are mixed well. Using a tablespoon, drop level amounts of the mixture onto a tray and with floured hands roll into small oval shapes. Cover with plastic wrap and refrigerate for 1 hour or until firm.

Step 2: Bring a large saucepan of salted water to the boil. Drop gnocchi, in bunches, into the boiling water. Cook without stirring, until the gnocchi floats to the surface. Immediately remove gnocchi from pan with a slotted spoon and drain well.

Step 3: Heat Tomato and Chilli Sugo in a small pan with a good splash of Extra Virgin Olive Oil. Pour the Sugo over the gnocchi and add parsley, salt, and freshly cracked pepper to taste.

Step 4: Add freshly grated parmesan and a final flourish of Extra Virgin Olive Oil to serve

Tip: If you can’t find the Tomato & Chilli Sugo, buy a jar of sugo and add chilli to it. Simmer for a bit longer to get the chilli to infuse into the sauce.
